22 February 2014

Breakfast: We went to IHOP and were seated. Then, we began to wait and wait and wait and finally Kathie flagged down a waitress and said "could you get our waitress, please"? If she had not done this, I was prepared to wait 10 minutes and tell the manager, on our way out, how disappointed we were in the bad service.

An older waitress come up and said "they didn't tell me you were here". I could believe the receptionist had not bothered telling this waitress of our presence; this waitress was working a different section...

She turned out to be a good waitress and we had good service.

I ordered:
  • T-bone steak medium
  • 3 eggs over medium
  • hash browns instead of pancakes\
  • coffee and
  • water
The steak took a while but "oh, well". Kathie had a more complicated order and it came back perfectly. I'm glad now that Kathie flagged down that passing waitress...

Lunch:  ruben and later, some boiled rice and coffee and cold water

Boston Creamme Cupcakes

1 (3.4 oz) box Vanilla instant pudding
1 1/2 cups heavy whipping cream
1/2 cup powdered sugar
1/4 cup milk
1/2 cup sour cream

(NOTE: this pudding mixture tastes like pastry cream..it can be used as

a filling for a fruit tart or other pastry calling for cream filling such as

cream puffs.)

1.Make cupcakes/cake according to directions on box. Use your

favorite yellow cake, ours is Duncan Hines. Let cool.

2. Mix together pudding, cream, powdered sugar, milk, and sour cream.

Beat on medium speed until stuff peaks form. For cupcakes, cut each

cupcake in half and add a dollop of filling. Put top back on cupcake

and frost with ganache. I am making it as a whole cake, so the entire

filling is going over one layer and the second layer of cake will be

covered in the ganache

Ganache:
1 cup heavy whipping cream
12 oz semi-sweet chocolate chips

Heat cream in sauce pan until it comes to a boil. Remove from heat,

pour over chocolate in a mixing bowl. Stir to mix together. Let cool

slightly.

Keep in refrigerator until ready to serve.

Grandma's Fudge

"Grandma's Fudge"

2 cups white sugar
½ cup cocoa
1 cup milk
4 tablespoons butter
1 teaspoon vanilla extract
Tools: Candy thermometer

Directions

Note: Making perfect fudge can be a bit tricky and sometimes fudge will crystalize or not set. This old fashioned recipe makes a fantastic fudge. It is best to have a candy thermometer on hand so you know you have reached the necessary temperature.

Butter an 8x8 inch square baking pan. Set aside.
Grease the sides of a medium sized sauce pan with butter.
In saucepan combine sugar, cocoa and milk.
Stir to blend, then bring to a boil, stirring constantly.
Reduce heat and simmer. Do not stir again.
Place candy thermometer in pan and cook until temperature reaches 238 degrees F (114 degrees C).
*If you are not using a thermometer, then cook until a drop of this mixture in a cup of cold water forms a soft ball. Feel the ball with your fingers to make sure it is the right consistency. It should flatten when pressed between your fingers.
Remove from heat. Add butter and vanilla extract.
Beat with a wooden spoon or hand mixer until the fudge loses its shine.
Pour into prepared pan and let cool and cut into small squares.

I got this off a facebook page,

Breakfast: milk toast and coffee

Lunch: hamburger and coffee

Snack: a piece of cheese and a piece of Slim Jim like pepperoni stick

Dinner: at a place called "Thirstys" in Hays, Kansas

We had an excellent bar tender; he let me sample a couple of little glasses of beer before I settled on an IP and a local brew (a strange name that started with a "Gr").

The meal was
  • dry hamburger with little gravy
  • a somewhat dry pork chop
  • baked chopped potatoes
  • a veggie mix
  • iced water
The meal was adequate but not great; the bar was the draw to this place and had excellent beers (perhaps one "light" beer on tap)
