Lunch: at Napoli's at the Garden City Airport for:
  • home made rolls and butter
  • spaghetti with meat sauce, meat balls, "Italian sausage"
  • two glasses of "Diet Pepsi"
Snack: a Reese's Cup and iced water
 
Dinner: Healthy Choice Classic Meat Loaf and iced water and some dark chocolate for desert.

Breakfast: We went to IHOP and I had:

  • two eggs over medium
  • hash browns
  • sirloin tips with sauteed onion
  • two pancakes
  • 2 glass of orange juice
  • coffee

Lunch:  2 hot dogs, cottage cheese and potatoe chips and cold water 

Snack:   dark chocolate 

Dinner: We had:  

  • asparagus
  • chicken breast
  • rice pilaf
  • cold water
Had a gin-n-tonic after dinner while watching a couple of bad (by definition) Science Fiction movies. 

two Chocolate Liqueur recipes

Quick Chocolate Liqueur

Ingredients
  1. 1 cup sugar
  2. 1 cup water
  3. 1 tsp. chocolate extract
  4. 1/2 tsp. vanilla extract
  5. 1 cup vodka
Directions Combine sugar and water in medium heavy saucepan over medium high heat. Bring to a boil, stirring constantly.
Lower heat and simmer 5 minutes. Remove from heat and cool thoroughly.

Stir in chocolate extract, vanilla and vodka. Pour into a clean glass bottle with tight fitting lid and store in a cool, dry place. Makes 1 pint As mentioned above, this second recipe takes about 6 weeks to make but it doesn’t require chocolate extract. So if you’re having trouble finding it or just don’t want to buy it, you’ve probably already got everything you need at home. And I’m willing to bet that it is worth the wait! Since I just got a bunch of vanilla beans in the mail (25 beans for €13) I’m looking forward to trying this out, even though it’s more labor intensive.





Chocolate Liqueur

  1. 1 1/2 cups granulated sugar
  2. 3/4 cup water
  3. 5 Tbsp unsweetened cocoa powder
  4. 3 cups vodka
  5. 1 vanilla bean, split
Directions Mix sugar, water, and cocoa in a small saucepan. Bring to a boil over medium heat, stirring occasionally. Reduce heat to low and simmer, stirring occasionally, just until sugar and cocoa are completely dissolved.

Remove from heat and cool to room temperature.

Pour into a clean 2-quart glass container. Stir in vodka and vanilla bean. Cover tightly; keep in a cool, dark place for 14 days, shaking container thoroughly every 2 days.

Strain liqueur through a moist paper coffee filter into a clean glass container. Straining will take a couple of hours as residue is very thick. Change filter halfway through. If residue remains, strain again immediately.

Cover tightly; let liqueur age in cool, dark place at least 1 month.

Double Chocolate Chip Brownies Reciper

Healthy Recipes Double-Chocolate Brownies Recipe

Prep Time: 10 mins Cook Time: 15 mins Total Time: 25 mins

 Ingredients
  • cooking spray
  • 1/4 cup(s) butter
  • 2/3 cup(s) sugar, granulated
  • 1/2 cup(s) water
  • teaspoon vanilla extract
  • 1 cup(s) flour, all-purpose
  • 1/4 cup(s) cocoa powder, unsweetened
  • 1 teaspoon baking powder
  • 1/4 cup(s) chocolate chips, semisweet miniature
  • 2 teaspoon sugar, powdered
Preparation

 1. Preheat oven to 350°F. Lightly coat the bottom of a 9x9x2-inch baking pan with nonstick cooking spray, being careful not to coat sides of pan.

 2. In a medium saucepan, melt butter; remove from heat. Stir in granulated sugar, the water, and vanilla. Stir in flour, cocoa powder, and baking powder until combined. Stir in chocolate pieces. Pour batter into prepared pan.

 3. Bake for 15 to 18 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack. Remove from pan. Cut into 16 bars. Sprinkle with the powdered sugar.

Vinallia Custard

Vinilla Custard with Chocolate1

Ingredients
  • 2 cups milk
  • 2 tablespoons cornstarch
  • 1/3 cup sugar
  • 2 eggs, lightly beaten
  • 1 teaspoon vanilla
  • 1/4 cup chocolate, grated
Directions Have eggs ready in a small bowl.

Using a whisk, combine milk, sugar and cornstarch in a saucepan over medium heat.
Allow milk to heat to the point when tiny bubbles form around edges of pan. Whisk occasionally to prevent clumping.

Remove milk mixture from heat.

Mix about 2 tablespoons of scalded milk mixture into eggs using whisk, then introduce eggs into milk mixture in a slow stream, whisking milk mixture constantly.

Return pan to heat and whisk gently until custard thickens, another two or three minutes. Do not allow to boil.

Remove pan from heat and stir in vanilla.

Pour into serving cups and chill in fridge until ready to serve. Sprinkle with chocolate just before serving.

Saurian Brandy recipe
  • 1/4 cup grated orange rind
  • 1 pint100 proof vodka
  • 1 cup sugar 2/3 cup grade A maple syrup
Put orange rind in a half-pint jar with 1/4 cup vodka. Seal it and shake occasionally. Let it steep overnight. Pour sugar and 1 2/3 cups vodka into a 28 ounce bottle. Seal it and shake until all the sugar is dissolved, then add the maple syrup. Filter the orange extract through a fine handkerchief or coffee filter until it becomes clear. Add a tablespoon of the final extract to the vodka syrup mixture and mix well. If your orange peels are much more or less aromatic than average, adjust the quantity so that you have enough to hide the maple flavor, without having enough to make the liqueur bitter or recognizably orange flavored.
