Breakfast: oatmeal (fresh made!) and coffee

Lunch: at Casey's Cowtown: steak sandwich, fries and iced water.  The service was fine!

Dinner:  Kathie called Appleby's "Curbside Service" to order take away but got put on terminal hold. After 3 minutes on hold, she hung up and went to Burger King. (I'd have to say the Appleby's service was not fine!)

For dinner, she brought me a double whopper and fries. I was feeling ill and ate about half of it. The next morning, about 4:20, I checked my blood sugar and it was 159! Ah, I am so going to be going on Levemir after I bomb the A1C test in November  :-[ (November is when I get my annual VA checkup...)  I am going to power up the movie camera and have Kathie film my first self stabbing; how am I going to tell my relatives I've finally lost the battle against the needle?)

_____Breakfast: From Burger King, a big omelet sandwich, tater tots, coffee
________Lunch: We went to the new Italian Restaurant on Front Street, in the old camera store. I had
  • two slices of bread and butter
  • spaghetti with a spicy tomato sauce with meat
  • two glasses of "Diet Coke"

There was a  problem in that the kitchen sent out the wrong food so we had to send the plates back for the real food. We liked the waitress; she was at "Vernon's Place" and then the "Hitching Post" and is now here. I handed the tip to her and said "this tip is for you and not the cooks". She nodded and stashed the tiip.
_____ Dinner: Homemade boiled roast beef with potatoes and carrots and water.

I had browned beef bones yesterday and took a shot at making brown gravy. It was a total flop...

Breakfast:  We went to Mike Casey's "Casey's Cowtown" for breakfast. I had
  • 2 eggs over medium
  • a thin ham "steak"
  • hash browns
  • 2 slices of whole wheat toast
  • coffee
  • iced water
The food was fine, the service adequate.

Lunch: Kathie made baked chicken with dressing and aspargius; I had cold water and later some coffee.

Snack: I had an irrestible craving for something decadent and got myself a medium choclate Frosty from Wendys. It was good...

Dinner: I had a Healthy Choice Classic Meat Load (Meat loaf with Rich Brown Gravy, Mashed Potatoes, Sweet Corn Blend & Apple Cranberry Multigrain Crisp) and a couple of little Oreo cookies. I found these cookies going thru my junk bag

Then, I had a bag of popcorn.

Feeling decadent, I had an ice creamme sandwich.



A note on service: I have not been thrilled with the restaurant service lately.

 You should not have to flag down a waitress to get a drink refill.

You should not be handed your bill before you are offered the chance to order desert. In fact, if a restaurant offers desert, you should be asked if you want any. Now, speaking as a diabetic, I should not have desert and I suppose the "wait staff" is doing me a favour. However, since they don't know of my health concerns, I think the "wait staff" apparently are simply not interested in doing further business with me/us after we've finished the meal.  Thus, they lose a sale and get a smaller tip.

The service in Dodge City has simply been poor; sadly, this is no change from what it has been for perhaps 10 - 14 years...

Breakfast: a double portion of creamme of wheat (what I normally think of as being one serving!), two slices of sour dough toast and coffee

Lunch: We went to the Boot Hill Casino for lunch. There, I had:
  • a meat and veggie soup. The meat might have been beef but it and the soup tasted like it should have been a shoulder of ham soup
  • a 14 oz charcoal cooked rib eye (good but I'm not used to charcoal cooked steak)
  • a baked potatoe
  • two little rolls
  • split a "Suicide by Choalate" cake with Kathie
  • two glasses of "Diet Pepsi"
We got good service and the waitress made a fine effort to remember what I like to drink with lunch ("Diet Pepsi, no ice"). She didn't remember it all but that is fine; she made the effort!

Post-lunch, I had some more coffee (actually, about a ½ cup) and not quite that much before going to work in the late afternoon.

Dinner: After the bigness of my lunch, I had a Healthy Choice meal for dinner: Beef Pot Roast (Roasted Beef with Cabernet Gravy, Carrots, Red Potatoes & Apple Cranberry Mutigrain Crisp) and iced water

Breakfast: about 1 cup (the last of) my homemade beef stew from this past weekend, a peanut butter and grape jelly sandwich and coffee

Lunch: We went to the "North" Pizza Hut. I went inside expected
  1. the buffet line to be anemic
  2. service to be poor
  3. have to go to the counter to get a refill of my soft drink.
Given these exceptions, I was "disappointed" by:

"Disappointment #1": There actually had a fine selection of items and enough stuff to make a decent salad.

"Disappointment #2": There was only one waitress working the place so I really didn't expect much service. When I went to get some desert, the waitress hustled over with a pitcher of "Diet Pepsi" and filled my glass as I put some apple pie pizza on my plate.

I shouldn't refer to these two good items as "Disappointments" but then my sense of humour sometimes isn't the best... ;-)

The food selection was actually quite good and the service quite adequate and better than we've gotten the last several times we've gone to Pizza Hut.

For lunch, I had:
  • salad with "bacon", cheddar cheese and Thousand Island dressing
  • piece of pepperoni pizza
  • piece of hamburger pizza
  • piece of apple pie pizza
  • some noddle stuff with red sauce
  • a piece of sticky pastry
  • the aforementioned glasses (2) of "Diet Pepsi"
Dinner: A Healthy Choice Classic Meat Loaf (Meat Loaf with Rich Brown Gravy, Mashed Potatoes, Sweet Corn Blend & Apple Cranberry Multigrain Crisp) and iced water

Breakfast: some corn beef hash, two fried/scrambled eggs and coffee

Lunch: at the new Mexican place in what used to be Mike Casey's 2nd place: an "open face" taco, two items wrapped in dough, great re-fried beans and rice. I also had two "Diet Cokes" without ice; I would have ordered a desert but the waitress dropped our bill off without asking "would you folks like desert"? I took this as a strong hint: don't order desert!  So, I did not order desert.

There were only two waitress in the place and service was quite slow. When I finally got "our" waitress' attention and asked for a refill, she said :"oh, you want a refill"? "No, I just like waving my glass in the air!" Actually, I said "yes".

Well, yet another place in Dodge City with decent food and not so good service. This seems to be a pattern...

Snack: I had some orange sherbet and coffee; tomorrow, I will not drink coffee after 1 pm. I suspect that has been upsetting my stomach in the late afternoon lately.

Dinner: I had the rest of the left over stew and iced water. Afterward, I felt sick to my stomach and am wondering why I seem to have stomach problems a lot lately...

Breakfast: I put the required amount of water for a double serving of grits into a small sauce pan, brought the water to a boil, dropped in two eggs and waited till the eggs were fairly well cooked (cooked a poached eggs) and then added the grits. I put some spread (not butter) and a pinch of red peppers in with the raw grits and cooked this mess as if it were grits. This and coffee made for a fine, if seldom, meal.

Lunch: two bierocks and a bag of cheezets and water.

Dinner: home made beef stew, some garlic bread and a MGD beer.

My Mother's all meat" meal. Something she did not let my brothers and I try and which she claimed to not remember decades later. (I believed her.)

Tuna noodle casserol

Choclate Liquor Recipe

1½ cup Sugar
¾ cup Water
3 cups Vodka
5 tablespoons Unsweetened cocoa
1 each Vanilla bean, split

Combine sugar and water in small saucepan; cook over medium heat, stirring occasionally, until mixture boils. Reduce heat to low; simmer, stirring occasionally, until sugar has completely dissolved. Remove from heat; cool to room temperature. Measure 1 cup of the mixture; combine with vodka, cocoa and vanilla bean in clean 2-quart glass container. Cover tightly; keep in cool dark place for 14 days, shaking thoroughly every 2 days. Strain liqueur through dampened coffee filter paper into clean glass container. (Change filter paper in mid-process or, if necessary, let drip overnight as cocoa residue is very thick.) Repeat straining process if residue remains. Remove vanilla bean. Cover tightly; let liqueur age in cool, dark place for at least 1 month. About 1 quart.

NOT FOR MY WIFE'S EYES

    There was a bit of a problem with boiling the pork chops [on 14 November 2008].

    I had worked the 4 am to noon shift and was very tired. So, after I put the pork chops on hot, to bring the water to a boil for a few minutes, I sat down by the computer and zoned out. I completely forgot the boiling water, which I had planned on reducing to a simmer after a few minutes.

    I didn't remember them until the house was filled with dense smoke and the smoke detector went off. I checked the pork chops and the bottoms were burnt black, while the top was seriously overcooked.

    The important thing is the house was filled with smoke and it was November. The good think is that it was a nice day and when I opened the window in the main bedroom; both my cats went up onto it. I then turned the fans on in both bathrooms and over the stove. I also opened both the front and back doors and started waiting for the house to air out.

    It took almost three hours before the house stopped smelling like smoke. I waited a bit longer and then shut the windows, the doors and turned the fans off.

    When Kathie got home, she mentioned how smoky the house was. I didn't have the nerve to tell her what happened [and that the house had been a lot worst earlier].

Breakfast:

Lunch: a bowl of chicken noodle soup (from Quinox) and small bag of potatoe chips and a medium "Diet Pepsi"

I was feeling ill at noon so I didn't go beyond the soup; now, I'm feeling very hungry (it is 7:16 pm) and looking forward to my dinner...

Dinner: a homemade "treat" of:
  • boiled pork chops
  • boiled potatoes
  • sour kraut
and iced water

I scored 149

Snack: I've been eying the "Dove SILKY SMOOTH DARK CHOCOLATE" bar in the work freezer for some time. Since no one has eaten it, I finally convinced myself that it was one I put there a year or so ago.

We had the misfortune to get the side of the PH that apparently was not assigned a waitress...

Dinner: Healthy Choice Beef pot Roast (roasted beef with Cabernet Gravy, Carrots, Red Potatoes & Apple Cranberry Multigrain Crisp) and iced water

Breakfast: the left over bacon from yesterday between two slices of sour dough toast (didn't taste like the pan...) and a bowl of cheerios. The bacon must have been fine since my dog ate his "tithe" without complaint; that is, I doubt he even chewed it!

I felt reasonably horrible after the milk with breakfast and then walking on the treadmill and lifting weights. There must be something going around.

Lunch: at Casey's Cowtown, a little steak sandwich and french fries plus one glass of iced water.

Desert: I had a small container of chocolate ice creamme (and my dog got his "tithe" as well... ;-)  )

Dinner:  Kroger "healthy meals made simple" lemon herb chicken with brown rice (boneless chicken breast with rib meat in a light lemon herb sauce) with iced water

This tasted good but definitely not good enough to have again. The lemon was too strong and it actually tasted too sweet; what a surprise given that "sugar" is listed as the 4th ingredient.

Snack: a choclate chip cookie; I left the other for tomorrow night...

Breakfast: using my cast iron fry pan, I
  • fried bacon
  • cooked two eggs in the fat
  • toasted two slices of sour dough bread
  • made bad instant coffee
My stomach was upset afterward which makes me wonder if there is something with the fry pan that upsets my stomach (which never happens if I let the good cooked on it set in the refer) or if it simply was the amount of grease on the bacon...

Lunch: We went to Sonic and I ordered:
  • double hamburger with no cheese
  • french fries
  • medium "Diet Pepsi" with no ice
They confirmed that I did not want cheese.  Not only did my burger come with cheese slathering the meat, both patties  looked like they had been dipped in cheese sauce. Mine appeared to have more cheese than my wife's burger and she asked for cheese...

Pre-dinner blues: I have a slight headache, slight nausea and pangs of hunger and this matches what Wikipedia had for hyperglycemia.  What a surprise!  =-O

Dinner: A TV dinner, Maríe Callender's Country Fried Beef Steak, with mashed potatoes, gravy and glazed carrots and iced water

Lunch: at the "Chinese", where I had some beef dishes, chicken dishes, chocolate pudding and  Vanilla pudding and "Diet Pepsi"

I think I've gotten terminally tired of the seasoning at "King's  Buffet" and will have to give it a rest for several months. Right now, I would rather go to "Pizza Hut" (and this is not a good thing!).

Snack: about ⅓ to ½ cup of fresh coffee (finished by 5:05 pm and thus, should not screw up my sleep tonight)

Dinner:  Lean Cuisine Pepperoni Pizza and iced water

This entry really started yesterday:
I spent the rest of the night waking up feeling stuffed. I refused to stick my finger down my throat (although I would have felt better) and took a shot of Maalox and later a Tums. The food was excellent but my feeling bad was simply due my stomach. I can't seem to handle fat or handle getting too stuffed.

At 6:03 am, I woke up feelikng fine but had to pee. After that, I felt very hungry but I decided "screw it", I'm not giving into my stomach after what it did to me all night...

  • since Kathie drove home, I had a couple of bottles of Bud; this was the only beer that wasn't too strong and wasn't too weak for me (like that wimp beer, Michelob Ultra. Michelob Lager is a fine beer, Ultra sucks!.

Grandma Lil's 114Birthday

Breakfast: From Burger King

Lunch: at the new "Mexican" place where "Delmonicos" used to be, I had a variety of Mexican dishes and two glasses of "Diet Coke". It was fine.
   
Dinner: Lean Crusine Three Meat PIzza: pepperoni, italian sausage and seasoned ground beef with reduced fat mozzarellas cheese and cold water.

This would have been my Grandma Lil's 114th birthday.She was born Lillian Lotte Pepperall, daughter of James Pepperall and Bessie Burge on 13 August 1896 in England. She died on 17 April 1971.  Her cause of death was "coronary thrombosis" and "hypertension" This "hypertension" is something that afflicts our bloodline. I am on two blood pressure medications and a very strong anti-cholesterol medication. I imagine Grandma Lil might have lived longer had she modern medications. However, she handled the dearth of Pop (her husband, my paternal grandfather) very badly and I can't she the Lady as having wanted to live much longer...

After writhing this, I had a strange mental image: I remembered the family getting together in my paternal grandparent's living room, with Grandma Lil sitting by the wall on the other side of the stairs. She said "no, that's not true..."

It was a strange and mystic moment, especially since I'm not much for "speaking with the dead".

Breakfast:  oatmeal and coffee

Snack: popcorn and coffee

Lunch: at Mary's, on East Trail Street
  • double hamburger - two patties of well done charcoal cooked meat,
  • home made fries - you could tell these were once potatoes and not the product of an extruder!
  • a bottle of Diet Pepsi
The place was crowded and there were not enough waitresses. Still, our orders were taken fairly quickly, the drinks brought to out table before the food order was taken and the food obviously brought to us as soon as it was up. All in all, a good meal (albeit not fancy) with reasonably good service.

I recommend this place.

Snack:  a vanilla ice cramme cone

Dinner: I had a homemade meal:
  • a can of tuna fish baked in the oven
  • baked potatoes
  • boiled broccoli
  • cold water to drink
I had hoped my blood sugar would not be too high and it was much higher than I feared it would be (265). I have problems with this.
  • perhaps the meter is off and I should use a glucose test solution to check the meter?
  • perhaps the ice creamme was kicking me in the ass?
  • perhaps the baked potatoe did an anomalous good job and jacking my blood sugar?
Ah, I'm so shafted! The bad karma from bad mouthing my youngest brother about his inability to control his blood sugar is rebounding upon me! I guess I'll be using insulin come late November, if I can bring myself to wait that long!

Breakfast: Wheaties and coffee

Lunch: from Casey's Cowtown:
  • steak sandwich

The food was good and the service was very good! Mike Casey has gotten into the habit of giving the Lions a great waitress and I don't begrudge her nice tips!

Dinner: We went to the 2010 Dodge City Rodeo and had
  • hamburger
  • chips
  • a small container of vanilla ice creamme and
  • a can of Diet Pepsi

I asked for a well cooked hamburger and it was a bit cold. About an hour after going to bed, everything I'd had to eat or drink came back up. Probably it was a combination of too much exertion, heat and sun.

We had worked as ushers at the rodeo and that was walking around for about 1½ hours, in the sun and approximately 90° heat.

Snack: After ushering, we watched the rodeo. I bought one of those huge donuts ("Elephant Ears"?), covered with powdered sugar and split this with Kathie. I traded about half of this was a sip of her beer.
 

Pre-Bed Snack: a largish glass of tonic water with maybe an oz of Vodka

Years ago, my wife read an article about a woman who found a deep fat fried rat in her box of Kentucky Fried Chicken.  She sued and KFC paid her a lot of money. Since then, we have callled KFC "The Rat".

Breakfast: cheerios and coffee

Lunch: at the North Pizza Hut:
  • a slice of peperoni pizza
  • two chunks of their cinnamon roll desert
  • three little cookies (there was no chocolate pudding tapioca to go with it...)
  • two shots of salad (there was no cottage cheese for that matter) and all served with
  • a large dose of poor service!

Bad poor service you say?
We were seated quickly enough in a booth but the seat had water sitting on it. I had to ask our waitress to dry it off; she was embarrassed by this.

She did a quick job of getting my glass of "Diet Pepsi, no ice" (although it seemed a rather long wait to me!)

I was almost done with the glass when I realized our waitress had not come around to see if I wanted more Diet Pepsi. I tried flagging her and another waitress down but they did that "blind waitress" act. It worked; I ended up walking up to the checkout table to ask for a refill. The woman behind the counter kept her eyes down and finished some paperwork. When it was obvious that I wasn't going away, she glanced at me and said "yes". I said "I'd like a refill of Diet Pepsi, please." She refilled my glass and looking down said "here you are" and acted like she had done me a real favor.

There was no apology for me having to go get my free refill; just annoyance on her part.

After I sat down and finished off my "feast" :-D , our waitress came around and offered to refill my "Doctor Pepper". I give her partial credit for making the effort to do glass refill after I'd gotten my own refill. She loses this partial credit by not only bringing the wrong drink around but by bringing Dr. Pepper! (Which I despise!)

I didn't say anything to my wife; she saw it all. Hopefully, this will be the last time we go to this "restaurant" for a long time to come. (Come to think of it, that is basically what she said after we ate at "The Rat" yesterday.

Snack: a 3.8oz container of chocolate ice creamme with chocolate shell on it; my dog enjoyed his share. Probably should not have had it but could not resist...

Dinner: I had a Healthy Choice Cafe Steamers Cajun Style Chicken & Scrimp (Chicken Tenderloin & Shrimp with Rice and Vegetables in Spicy Cajun-Style Sauce) and iced water (This at least was a healthy choice of a meal.)

Breakfast: a small bowl of left over tuna noodle casserole and coffee. I felt fine after eating and did not have the awful side effects I had from yesterday's breakfast! Must have been the pancake syrup mixed with tart orange juice?

Lunch: We went to the Italian Restaurant at the Garden City Airport. (We had gone to Sam's and this was our reward for timing the shopping trip correctly.) I had excellent home made rolls (3 of them), spaghetti with meat sauce and meatballs and 2 glasses of Diet Pepsi. It was all very good.

Snack: several slivers of beef jerky and some dark chocolate

Dinner: A Lean Cuisine Cheddar Potatoes with Broccoli (potatoes with broccoli and cheddar cheese sauce) and iced water

Snack:  a couple of chocolate chip cookies (I was very hungry.)

 Breakfast: We went to the Boot Hill Casino for breakfast (and some penny slot action). There, I had
  • SOS on hash browns
  • grape jelly on a powder biscuit
  • scrambled eggs
  • well cooked bacon (3 slices)
  • 2 well cooked disk shaped sausage and
  • a waffle
After eating the waffle, I had the feeling I should have skipped it. This was the 7th breakfast we had there after joining the "breakfast club", so we got our breakfast for free. I asked the waitress for a glass of orange juice. Silly me, I thought it would come with the meal but she said "I will have to charge you for that". Later, the urge for orange juice became too much for me so I ordered a glass. I figured it couldn't be too much so I gave the waiter US$200. I went to the "wait staff" area to make sure they had gotten my US$200 and was told the actual price was US$218!

I realize it is probably silly to be upset by this price but I recall the champagne and orange juice wasn't much more expensive that this. I hadn't brought much change with me but was able to find a single coin (a quarter) in one pocket. I gave this to "our" waitress and she must have assumed that I'd let her have the 7¢ as a tip...

I don't hold this price against the waitress; I think given the amount of money I later dropped on the slots, that a more proper Lost Wages attitude of keeping the food and drinks as cheap as possible or even free would have left me with a better attitude. (Ok, so it was only about US$700 that I dropped on the slots.)

About a ½ hour later, I realized the orange juice was mixing rather badly with the pancake/waffle syrup and I ended up losing my breakfast. To quote Vir Coto "it tasted so good going down, not so good coming back [up]". [or words to that effect as I remember them from watching Babylon 5]

Lunch: a turkey and roast beef on sour dough bread sandwich with coleslaw and cold water

Snack: coffee

Dinner: A Lean Crusine Swedish Meatballs: with pasta in a savory gravy, an apple and a glass of iced water

I could have had "bull fries" but simply don't like them. "Bull Fries" are deep fried bull balls.

After we got home, I had a double gin-n-tonic; I was quite thirsty!

Snack: chips and cheese at the movie theater...I would have had a "Diet Pepsi, no ice" except I didn't have enough money on me! Theater snacks have gotten really expensive! The chips were a bit stale, the cheese dip cooled and became lumpy (I got to the theater too early and had to wait 20 minutes for the movie) and the movie itself, while fine, had me wondering why I'd spent the money on it. This is the third movie this summer that I've felt I really didn't get my money's worth from the movie...

Dinner: a nice little diet TV dinner featuring noodles and sauce and a bottle of room temperature water

Lunch: a nice little TV dinner and then some potatoe soup after donating blood (I felt a great deal of satisfaction at having been able to donate; I was put on a 6 month deferral list simply because I had heart surgery on 13 January 2010...)

Dinner: from Applebys,
  • split an order of cheese sticks with my wife
  • ½ my dinner of 12 oz steak
  • baked potatoe and all of
  • a brownie with a very small scoop of vanilla ice creamme and chocolate fudge syrup
Two hours after dinner, my blood sugar was 211. I was shocked and outraged and dismayed!  My morning score had been 132 and I thought the exercise and trying to "eat right" was finally taking the blood sugar levels down. Silly me! It is enuf to make me dismay! Oh, well, we'll see if I can't get the levels down by the time I next check blood (about 4:20 am on Friday the 27th)

Very sweet and it terminated my chocolate/sweets craving ("Ah, sweet mystery of blood sugar...) I then put it in the freezer and hope to forget about it again... :-[

Dinner: the left over steak and baked potatoe from when we went to Bad Habits the other day; I added some boiled brociflower and had iced water.

Breakfast: bacon, fried in the 10½ inch cast iron fry pan, two eggs fried in the bacon grease in said fry pan and 2 cups of wonderful ( ;-) ) instant coffee

I like cooking with the cast iron fry pan even thought it seems to put a bit of a metallic flavour into the food. It was easy to wipe the bacon grease off the pan (which then looked clean) and to pour boiling water into the pan and "scrub" it with a piece of paper towel. After that, I scrubbed it with a salt loaded wash cloth, rinsed it with boiling water, dried it off and re-oiled with virgin olive oil. It should be good to go on Saturday, when I hope to get Kathie to cook bacon in it...

Lunch:
at King's Buffet, a pseudo-Chinese restaurant, a mixture of chicken and pork disks, rice, chocolate pudding on vanilla ice creamme and some kind of lumpy white pudding. I also had two glasses of "Diet Pepsi, no ice..."


I didn't think of this at all!     8.3    I guess I must subconsciously want to be an insulin (Levemir) user in November after all...


Snack
a couple of cups of coffee before going to work. I guess I just like have iced coffee when it is 95°F outside...


Dinner*:
The last of the left over rice pilaf and chicken (I simmered it with red wine this morning) and an oversize bowl of boiled carrots and, of course, iced water.

Personally, I don't like the flakey canned chicken and wish we'd fried or baked boneless skined chicken. We had some choclate chip yogurt and it was fairly nice.

Breakfast: at Burger King, their SOS on biscuits with potatoe thingies and a large coffee

Lunch: a little TV dinner with a bottle of Diet Pepsi

Dinner: At the remodeled "Bad Habits", I
  • split an order of cheese sticks with my wife
  • had a nice salad with Thousand Island dressing
  • about &frac12; of a 16+ (or so they said) T-bone steak
  • baked potatoe
My appetite wasn't that large after the cheese sticks and salad, so I ended up taking about &frac12; of the steak and potatoe home. I expect to have it for dinner tomorrow night.

The remodeled "Bad Habits" was reopened after Mike Casey had opened "Delmonicos".  "Delmonicos" was a fine place to eat but Mike had to close it since many of his customers went to "Bad Habits". I've never had the heart to tell Mike that "Bad Habits" was simply a better restaurant. Mike's food was comparable but "Bad Habits" was larger and designed as a sport bar (pool tables  and wide screen TVs) and "Delmonicos" as a traditional sit-down place. I do think the service at "Delmonicos" was better.

Diabetics Forecast recipie (modified)

A recent copy of "Diabetics Forecast" had a tomato soup recipe I decided to try.   I misplaced the issue so I had to see if I could remember the recipe. What I remembered was:
  • ¼ cup Fennel
  • 1 medium onion
  • 2 celery stalks
The recipe called for sauteing these items for 7 minutes and till they were translucent. I was supposed to chop the items before sauteing but I didn't bother. Instead, I put them in the blender with about half the chicken broth and ground it up good. Then, this greenish and lumpy liquid when into a big sauce pan.
  • 1½ pounds of tomatoes (I had about 1 2/3; pounds
  • cook with the remainder of 2¼ cups of low sodium chicken brth
The recipe calls for cooking the onion, celery and fennel in about half of the "low sodium chicken broth" and then chopping up the tomoatoes and cooking them. After letting everything simmer for about 20 minutes, blend it.

I didn't have the patience to do the chopping or simmering os after blending the onion, celerty and fennel followed blending the tomatoe (with the remaining chicken broth) and then cooking for a while.

I didn't follow the directions but so what?

  1. salad with Thousand Island dressing

    They had a "problem" with their refrigerator so they put the salad dressings in squeeze bottles. "Our" waitress used a hot sauce vice Thousand Island and it sure burned my throat for a while...

  2. ribeye steak done medium

    It was red in the center and pink nearly to the top and bottom. My "medium" steak was "medium rare" at best...
  3. baked potatoe loaded with cheddar cheese and bacon

    Turned out just fine...

  4. a cold glass of Diet Pepsi!

    The Diet Pepsi tap had run dry and needed to be changed; "our" waitress did the change and could only get foam and fizz but no actual Diet Pepsi; I had iced water instead. She remembered to take the Diet Pepsi off the bill...

Snack: This being an anniversary of Kathie's 29th  birthday, I had bought her a cake. We each had a piece and invited her co-workers in to share this cake. We definitely did not want it near us at the house! Why?

Yes, that is my most recent A1C and the clue to when I'll be on injected insulin vice evening pills. In spite of my best efforts to lose weight, I haven't had much luck. I haven't been exercising very much lately (just restarted) and so that probably has a lot to do with the A1C going up. None the less, I anticipate the needle starting in late November 2010...

"free" drink refill. The waiter never did bring our bill to us by the
girl behind the counter figured out what we owed (on her second try...)
I shouldn't complain; the food was quite adequate.

Dinner: some pre-made stewed beef on pre-made mashed potatoes
it didn't taste as good as I remember it tasting and upset my stomach...
Snack: cottage cheese and grape jelly

Breakfast: at the Holiday Inn Express (Amarillo Texas), I had their breakfast of:

  • cheese omelet (from a box)
  • 2 little disk sausages
  • SOS on a biscuit
  • slice of bread with peanut butter and grape jelly and
  • coffee
Snack:We split my left over steak from the night before and I ate the little bit of biscuit. I ate half of the potatoe the night before but it wasn't very good cold.

Lunch: at a somewhat mediocre typical "Chinese buffet" in Ulysses, Kansas, I had various chicken items, rice and desert with "Diet Pepsi". 

Dinner:  We had some frozen you-cook-it Lazzana and I had a beer. For dessert, orange sherbet with hard shell chocolate sauce.

Breakfast: at home
  • fried eggs that went to scrambled...
  • grits
  • two chunks of overcooked hamburger

Lunch: at a place in Canyon Texas called Feldman's "Wrong Way Diner"
  • excellent pork chops (as good as I remember the Iowa Machine Shed being) and far superior to the burnt chunks of meat I create
  • baked potatoe
  • broccoli
Dinner: at the "Big Texan Steak Ranch" in Amarillo Texas
It was incredibly crowded so we started with a beer in the bar and when our buzzer went off, were taken upstairs to a table. There I had:
  • salad with Thousand Island dressing and 
  • a beer with the salad (my second of the night)
  • the main course consisted of
    • an 18 oz rib eye steak (which I couldn't finish and took to the hotel)
    • a large baked potatoe
    • two rolls and
    • another beer
Pre-Bed Snack: I simply did not have one! First, I was stuffed from dinner and second, I'd had enough to drink!

What can we say about the "Big Texan"? It was outstanding!

Living in "Beef country" (Kansas), we have been a naum ber of good (and mediocre) beef places in Kansas, Oklahoma and Texas. Without a doubt, "The Big Texan" had the finest steak we've had in many years! (Sorry, Mike Casey.) It was worth driving about 4½ hours to get to Amarillo. We're going back again, probably in late August...
First, a bit of bitching....  

We went to the nicest looking hotel near the "Big Texan" (Holliday Inn Express), parked the dcar and went in. there was a man in a limo with steer horns on the hood and a sign (on the door) advertising "Free Limo Service to The Big Texan". So, I trotted up and asked him "Sir, does this really mean you'll drive us to and from "The Big Texan" for free?"


"Sure does."


"Great, we're going as soon as we check into the hotel!"


Then, we went in and were able to get a nice room for not too expensive. We told the desk clerk we wanted to go to "The Big Texan" and she made the reservations for us. She gave us a little card. We went to our room, dumped the suitcase and "shoulder bag" (with cameras and meds) on the bed and hustled back to the waiting area by the front desk. It was about 6:40 pm West Texas time (ok, CDT)


We started waiting. While we were waiting, we started talking with family from Arizona (man, wife and two little boys). We hit it off pretty well. While we wait3ed, we asked the front desk clerk several times "when is the car getting here"? She called and was told "he's on his way". Then, she was told "one car has a flat and the other one blew out the front bearings." (Really?)


About 7:20 pm, the other couple got fed up and drove over to "The Big Texan". After a couple more calls, we were told the driver was finally coming and wold be there "in five minutes". Actually, we heard that several times.


I looked out the front door and saw a hood with steer horns and knew our driver was finally there.


The driver appologized several times for the delay and I believed him. Two of their six limos had broken; when you use cars a much as these folks do, I suppose you can expect the occasional multiple failures...


When we got to "The Big Texan", we ran into the couple we'd chatted with at the hotel. It turned out there was a very long (2 hour) waiting line to get in and they had gotten a "call disk" for us as well as them. These call disks are the kind used at Olive Garden.


It's good to have friends!


There were a number of people going back to the various hotels in Amarillo so we ended up having to wait maybe 20 minutes before we could start the 10 minute (or so) trip to the hotel. No big deal, really...

Breakfast: 2 soft boiled eggs on a hot dog bun and coffee

Lunch: From A & W:

  • a double hamburger with the usual crap (which my wife ate)
  • excellent french fries
  • a medium sized "Diet Root Beer" (no ice)

We had another typical order-from-the-bitch-box moment. We ordered the bacon hamburger and diet root beer with no ice for me and a hamburger with Diet Root Beer for Kathie. The man at the other end read back "bacon hamburger and root beer" and "hamburger and a Diet Root Beer". My wife called back that is a diet root beer with the bacon hamburger and a hamburger with a diet root beer. He repeated the order back and said "both diet root beers with no ice? Kathie repeated the orders and we had little hope that it wouold be gotten right.

We were right to be skeptical; the fellow behind the window gave us diet root beer, no ice. He offered to add ice to Kathie's order but we didn't want the hassle.

Dinner: You might say that Kathie made leftovers for dinner. We had her rice/noodle pilof mixed with canned chicken. Normally, we have the rice pilof by itself with baked boneless skinned chicken and I mix the leftovers to take to work. I didn't tell Kathie this but the flavour was off and I would have liked to season it up with mixed Kikoman soy sauce and lemon juice and Worchester Sauce (none of which we currently have in the house...)

Otherwise, it was fine and I certainly ate a good dinner...

Not too long ago, only snacking lightly after lunch would have really
bothered me. However, I don't feel very hungry. I suppose I could have
squeezed in my TV dinner but I was unusually busy this afternoon and
evening and simply did not think of food until around 7 pm, quickly got
too busy to worry about dinner and then just before 10 pm...

Awful "energy drink" (even Kathie didn't like it...) and then a small
bottle of ice cold water (rather hard to screw up the taste of water!)

Lunch: home made speghettie sauce (2 pounds of hamberger, 2 cans of
tomatoe sauce, around 1/4 cup of red whine, two tablespoons of brown
sugar) over noodles and garlic bread with coldwater

Dinner: Marie Callender's Beef & Broccoli (Sliced Beef with Rice &
Broccoli in a Savory Sauce) and iced water...

Snack: a Recess's cup...

Breakfast: Jimmy Dean bacon, egg, cheese and potatoe breakfast with coffee

Lunch: left over pork chop and mashed potatoes and iced water

Dinner: chicken mixed with a can of Campbell's creamme of chicken soup and boiled white rice

The chicken was pre-cooked, "cubed", chicken breasts from Dillions. It was rather fatty and not very good; I didn't mind giving chunks of the "chicken" to my dog.
A couple of hours after going to bed, I had been hacking and coughing and went to the bathroom to get some water. I abruptly rfou8nd myself vomiting. I had not idea that I woujld be getting sick. It was the first time I spontaneously vomited in a very long time; normally, I have to induce vomiting when IU am feeling ill. Of cource, this isn't something I can admit to my wife...

Breakfast: oatmeal and coffee

Dinner: At Casey's Cowtown:

  • salad with Thousand Island Dressing,
  • a very nice 12 oz Ribeye steak,
  • baked potatoe with butter and sour creamme,
  • bisquit vice a roll (My wife was very upset about this substitution)
  • Creame Bolue (I was upset because Mike Casey did not have Bacardi 151 for the flaming part. I ate the silly thing even though it wasn't as good as it would be if it had been heat through by the burning booze...)

My wife got Mike Casey talking about the finances of trying to run a restraunt and that are daunting. Four years ago, Mike said he had a bar tender, hostess and four waitress at night. Last night, he had himself vice the bartender and hostess and two waitresses. "Our girl" worked well given that she had a number of tables; unfortunately, there were not a grat number of customers...

Breakfast: from Bugger King, their SOS, potatoe thingies and coffee

Lunch: plain yogurt with frozen strawberries (I guess you lose weight
from feeling rotten after eating this?) and later, a peanut butter and
grape jelly sandwich at home

Dinner: two pork chops I fried in the cast iron fry pan, two little
baked potatoes (with cottage cheese) and applesauce.

The thing about the case iron skillet is you can not wash it with soap.
So, I scrapped out as much of the oil, chunks of pork that stuck to the
pan and the extra virgin olive oil I used to fry the pork chops. Then, I
filled the fry pan with boiling water and stirred it up, scrapping the
bottom of the fry pan. This looked like a weak soup before I poured the
liquid down the drain. I dried the pan, pour salt into it and scrubbed
the pan with the salt. Leftover grease on my supposedly clean pan turned
the salt a light brown. When I thought I'd gotten up as much residue as
I could, I poured the salt out (into the sink), rinsed the pan with cold
water, dried it well and rubbed the pan with fresh virgin olive oil.
After the coating, I removed as much of the olive oil as I could and
then left the pan on the stove. I'll wrap it in paper towels tomorrow
and put it back with the pans in the stove drawer.

My father in law told me that any food he couldn't get off with
scrapping would get left on the pan. I guess this is what the cook books
mean when they say using the cast iron fry pan leaves great tastes behind?
