Christmas 2012`

Breakfast: Kathie and I did the Big Breakfast:
  • Serri Lee coffee cake (this is the first time I've done it in the oven; in the future, I will cut it before baking it...)
  • scrambled eggs
  • thick cut bacon
  • coffee
Lunch: We went to the Boot Hill Casino Restaurant for their Christmas buffet and had
  • small salad
  • a few teaspoons of chilli
  • a few bites of a browie desert
  • some undercooked "well done" roast beef
  • a small piece of chicken cordon blue
  • a potatoe dish
  • roll and butter
  • spegethie with ham in a red sauce
  • ice creamme sundae
  • iced water
I told the Chef they needed to offer hamburger with the speghettie. I got a reply of "what?" So, I made a smart ass response: "hamburger, ground up dead cow". The Chef and the server got my meaning then...
 
Dinner: instand mashed potatoes and a peanut butter and grape jelly sandwich. My morning score was low enuf that I risked a bit of hyperglycemia with the masted potates...

Snack: some brownies and Flan that I cooked last night and brough it to work.
Lunch: left over rice pilof and chopped up chicken from night before last.
Dinner:  We went to the Boot Hill Casino Restaurant and I had:

  • salad
  • small amount of potatoe soup
  • about half of an 8 oz prime rib  
  • about half of a baked potatoe
  • iced water

Lunch: at King's Buffet for chicken, rice and desert and two glasses of "Diet Pepsi"
 
Dinner: bowl of Roman noodles with chopped up ham, a slice of sour dough bread with peanut butter and grape jelly and cold water. Later, I had an eggnog with a small amount of Rum.
 
The next morning, (this being written the next day), I had a blood sugar reading of 86!  I believe this is the lowest I have ever measured...

The service was better than it has been at Casey's Cowtown as we were the only customers and had a "wait staff" of three! Typically, at Casey's, we would have  been the smallest party, have been put in the smallest room and had poor service. Also, the Knights charged a lot less for Kathie's red wine, my Coors and my can of Diet Pepsi. So, as much as I like Casey's Cowtown, I think we should have our 2013 Christmas Party at the Knights...

_______Dinner: at a streak house we have not been to in years ("Central Station") and I had:

  • 8 oz fillet
  • baked potatoe
I ordered desert with the main course and the waitress came back and told me they were out of that desert.  Also, the service was quite slow and I had decided on no desert by the time our waitress wondered back. The steak was a bit dry and didn't taste so great (I've been spoiled by Mr. Cuningham's fillets at the defunct "Miriah Hills Restaurant. '


Pre-Bed Snack: We went to a play, at the local theater, and I had a rather nice desert.  Kathie came down with something and we had to leave at the intermission.

They had an excellent waitress, who was fired for what sounded like bogus reasons. It seems the best waitress eventually start thinking they are critical to the success of a restaurant (and are!) and thus get canned...
 
Dinner: a can of Progresso chicken soup and a peanut butter and grape jelly sandwich plus cold water.
 
I am so tired of "eating good" that I am going to cook up veggies, brown rice and a small amount of fish or chicken before future E shifts...

_______Dinner: Some Creamme of Chicken soup and a peanut butter and grape jelly sandwich. I had a cofffing fit and could not finish my soup.


I think I have been getting over something more  serious than grease in my food. I still feel weak today.

Lunch: the left over rice pilaf and chicken from last night, with a can of Pepsi One.
Snack: movie theater popcorn and "Diet Pepsi"
Dinner: from Papa Murphy's, a double hamburger and extra cheese pizza, two bottles of "LandShark" lager and iced water. I bought a container of their chocolate chip dough and made chocolate chip cookies.  I was too tired and too hungry and forgot the chunks of hamburger would emit grease into the pizza and this lead to me "blowing chunks" a couple of hours after going to bed. This got Kathie really upset...
Blowing chunks is not a deliberate act, contrary to the angry remarks she made through the bathroom door. It was either vomit in the bedroom toilet or in bed...

    Lunch: the leftover roast beef and potatoes and a can of Pepsi Zero (definitely an acquired taste!)
    Dinner:  Well, it won't be fancy like  and won't have  or even .  Oh, well
    Snack: We went to a truly outstanding movie, "Skyfall" and split popcorn and "Diet Pepsi". The critics say that "Skyfall" is the best "Bond Movie ever" and I agree!  It simply was outstanding!
    We went to the Boot Hill Casino Restaurant and I had:
    • a salad
    • a small cup of veggie soup
    • a "classic" roast beef, potatoes, carrots and onions dinner with basically raw cauliflower and broccoli. I drank iced water.
    • We split a slice of chocolate for desert. Our waitress put two scoops of vanilla ice creamme on the plate and that went down well.  
     The food was good and the service well above average.

    • roll with butter and  grape jelly (our waitress remembered I like grape jelly with the roll, which was fresh from the oven)

    The service was excellent but the kitchen slow so most of the Lions had to wait for lunch and this caused a lot of grumbling.

    Snack: some chocolate pudding

    Dinner: a can of Healthy Choice chicken noodle soup, two ears of corn on the cob and cold water.

    Lunch: from Pizza Hut for pizza and salad and desert.
     
    I had to complain to get them to bring out meat only pizza but when they did, they told me!
     
    We had initially gone to the Boot Hill Casino Restaurant but discovered they stopped serving lunch 2 weeks ago. We were offered the chance to "dine" at the snack bar but said "no" and went to Pizza Hut.
     
    Clearly, the Casino is raking in the bucks but they insist the bars and restaurant be self supporting. This is foolish; I am not much of a gambler but I am an eater of good food. By cutting back on the good bar (i.e. not providing LandShark on tap) and cutting out the lunch buffet, they are falling back on the pure gamblers. I like a decent meal before losing money in the slots; Kathie would rather "pull the lever" but gets tired of this when I sit next to her looking bored (having blown thru my $5 to $10...)
     
    I guess the Casino is trimming back the number of potential customers!
     
    Dinner: at home where I had Roman with two hot dogs and an ear of corn on the cob and drank cold water.

    The food was fine and the service good.  The only place they serve LandShark Lager is in the saloon but the saloon is only open Friday and Saturday evenings., What is the point of having such a saloon with such limited hours? Apparently, they don't have enough drinkers to support a saloon but enough for the little bar that is typically open,.

    This is the glass of "Diet Pepsi, No Ice". That can/'t be a glass full of ice! What appears to be ice must be an optical illusion!


    Yup, that does look like ice...

    Breakfast: cheerios and coffee
    Lunch: at Casa Alveraz, where I had:
    • "Mexican" meatball soup
    • a plate with a taco, an enclalata, rice and refried beans
    • chips and sausa
    • sopahilla for desert
    • 2 glasses of "Diet Pepsi, no ice"
    The food came before the soup and I had to ask for the soup.
    I ordered the cheaper of the two deserts, expecting to get simple pastry. Instead, I was given the more expensive of the two, which had ice creamme and strawberries. Truth be told, that was what I really wanted but it was not what I ordered...
    I complained to the checkout clerk and she simply sighed. I said "he is the owner?" She replied "yes".  I then said "he should leave the serving to the waitress". She smiled in agreement...
    Dinner: Hungry-Man "Boneless Fried Chicken" with "Tender chicken patties with home-style mashed potatoes and sweet corn - includes a chocolate brownie" and iced water

    Breakfast: two English muffins with peanut butter and grape jelly and coffee
     
    Lunch: at Casey's Cowtown: French dip, fries and iced water
     
    Snack: homemade chocolate pudding made with
    • a cup of 2% milk,
    • some dark chocolate,
    • about a teaspoon of baking chocolate,
    • two tablespoons of corn starch
    Cook over low heat and stir a lot...
     
    It tasted fine but I think it screwed up my blood sugar as I felt somewhat ill for a couple of hours afterwards.
     
    Dinner: A fine homemade meal of:
    • left over stewed stew meat from last night
    • 2 ears of corn on the cob
    • broccoli
    • iced water
    The lack of rice tonight may have been the difference between 201 last night and 110 tonight. White rice supposedly has a glycemic index of 64 ± 7, This is in the upper "medium" range from lower "high" (avoid) range. Coucous is just as bad. Converted white rice (Uncle Ben's) is only 38! I guess I'll have to get me some of that! Brown rice, the stuff that is supposed to be better for me, is 55±5!

    Breakfast: a tuna sandwich and a half peanut butter and grape jelly sandwich with coffee

    Lunch: at one of the two Olive Gardens in Wichita:
    • salad and bread sticks
    • spaghetti with meat sauce and meat balls
    • two glasses of "Diet Coke"
    We went to the Maize Road Olive Garden rather than "our usual", the Rock Road Olive Garden. I had more sauce and must of gotten a couple of extra meat balls. I was quite full at the end of the meal and had no desire for desert. It is quite different when we eat at the Rock Road Olive Garden. I'm still hungry after spaghetti and have room for desert...
     
    Dinner: We went to Red Lobster in Wichita and I had:
    • salad
    • those biscuits
    • fish and chips
    • split a desert with Kathie (liquid fudge stuffed chocolate chip cookie with a very small scoop of ice creamme)
    • Diet Coke
    We got back to the hotel and I had a gin-n-tonic. I kept burping up crap most of the night so I guess the fish was greasier than I had hoped for; I'll have broiled fish the next time we go there...
     
    However, I rather like the fish Kathie cooks better than what we get in restaurants.

    Dinner:  Marie Callender's Country Fried Pork Chop & Gravy, then several little Oreos and iced water

    Breakfast: oatmeal and coffee
     
    Lunch: one and a half Rubens, potatoe chips and a bottle of Diet Pepsi
     
    Dinner: boiled/stewed chicken with Ramon and two type of home made bread. I had water with dinner and a gin-n-tonic afterwards. Desert was orange sherbet with chocolate topping.
     
    The two types of bread:
    1. "French" bread made from a can of dough
    2. I made some home made "cheese" by mixing 2 cups of 2% milk with about a tablespoon of vinegar. I strained the solid stuff out and mixed a teaspoon of sugar in the liquid. Then, I added 2 cups of flour and stirred it. This was still too wet so I added more flour and stirred it till it was still too moist. I then baked it at 350°F for about 40 minutes. It turned out well...

    Breakfast: cheerios and coffee
     
    Lunch: bag of popcorn and later, a bierock and some pudding.
     
    Dinner: not fully boiled noodles and a can of tomato sauce (as homemade "spaghetti" goes, this was really bad!) We then went to a "cooking with diabetes" seminar and I had a small amount of "good for me" food, which was actually quite good. When I got home, I had a grape jelly on a single slice of sour dough bread "sandwich" and went to bed.

    Breakfast: the same food as yesterday. We decided that free at the hotel was better that paying at Montana Mikes. We still liked the food...
     
    Lunch: We drove to Wichita, Kansas and went to Olive Garden. The hoity-toity look down on Olive Garden, probably because they live in cities with much better "Italian". Well, living in southwest Kaunas, we can go to Napolias, at the Garden City airport for great "Italian" or we can make the five hour round trip to Wichita and eat at Olive Garden. We choice to eat there several times a year because it simply is the #2 Italian restaurant in central or western Kansas. The hoity-toity (defined as "assuming airs or pretentious or haughty"), who don't like "the Olive Garden" simply don't have the right perspective!
     
    I had:
    • salad and bread sticks
    • spaghetti with meat sauce and meatballs
    • an absolutely sinful chocolate cake desert
    • a couple of glasses of "Diet Pepsi, no ice please"
    The food was excellent, and the service very good.
     
    Dinner: back home and I went all out and had Ramon noodles with a peanut butter and grape jelly sandwich. Who says I ain't the gourmet (or is it gourmand)?

    I had indigestion after going to bed but not as bad as the night before. For the second night in a roll, Kathie had worst stomach upset...

    Several hours after going to bed, I started burping up and this had to be a reaction to the grease in the chicken fried beef.

    I had iced water.
     
    The waitress was a bit scarce but the manager came around to check on the service. Our waitress picked up the quality of her service just before the manager made her rounds. Curious...

    We were there for the monthly Lions Board meeting and were put in the usual meeting room (too large for this crowd) vice the usual room the board meets in. Curious but then we had a new waitress...

    • mixed and boiled broccoli florets and carrots
    • cold water
    This turned out quite nicely and as fish go, was better than any place in town (I don't know who serve fish in town).
     
    We didn't have  (desert).

    We got a waitress on her first day. She carefully wrote down that I wanted "mashed potatoes and brown gravy" and came back to confirm that I wanted "brown gravy". She then brought beef, and beans.  I said "no beans" and she eventually brought what I ordered.
    Service - amateur and inexperienced

    I took the left overs home and expect to eat them for lunch day after tomorrow...

    Dinner: We went to the Boot Hill Casino Restaurant and I had:

    • some veggies
    • two bottles of Bud
    Comments on the Boot Hill Casino Restaurant and my initial report on it.

    We had an obvious college kid for a waiter; I doubt we'll see him back there the next time we go.

    The on tap beer selection sucked and consisted of "light", "lite", "light", "lite", something non-"light" that I don't like and "Michelob piss" -er- "Ultra".  
    My wife asked "do you have Michelob in the bottle?"
    "Yes, we do."
    That sounded too good to be true so I asked "Is that Mic Ultra?"
    The waiter gave me a "dud, no shit" look and said "yes".
    I replied "I can't stand 'Ultra' and like Michelob Lager." "We don't have that."
    I ordered a Bud. Later, I walked over and asked the bar tender if the other bar had "LandShark".  She said they had just replaced it with a pumpkin beer. I didn't try it; I would have drank a "LandShark" on tap.

    The hot dog stand was gone.

    Normally, I would have asked for "Diet Pepsi, no ice" but I have bladder problems today and didn't dare consume too many fluids before being on the road for over an hour getting home!
     
    The food was excellent, the service quite nice and the view out the window very nice. It was worth pretending we had gone to Garden City solely to go to Sam's...
     
    Dinner: Healthy Choice Sweet and Sour Chicken (Chicken Breast Fritter Chunks in Sweet & Sour Sauce over Whole Grain Rice and Broccoli) and iced water and later, popcorn.

    Breakfast: Kathie cooked the last of the bacon and I <s>boiled</s> fried two eggs in the hot grease. We were out of bread so I could not make toast and I didn't want to take the time to fry potatoes. Later, I had a third egg; I also have a couple of cups of coffee.
     
    Snack: a chunk of dark chocolate and more coffee
     
    Lunch: We went to the Knights of Columbus OctoberFest. There, I had:
    • brat $2.50
    • sauerkraut 50¢
    • very large turkey leg $5.00
    • potatoe casserole $2.50
    • 2 cans of Diet Pepsi @ $1/can
    We skipped the desert.
     
    The brat and kraut were good as was the turkey leg (I ate part and Kathie finished it off when I was de-watering in the men's room) not too bad. The potatoe casserole was incredibly salty, probably an incentive for diners to drink a lot of beer...
     
    Speaking of beer, they had a lot of "light" beer and only two brands that I would have considered almost true OctoberFest beers. Actually, they really didn't have any beers that could be considered "OctoberFest Beers" (i.e. no pumpkin beers or special autumn beers). Kathie declined to buy any and since I had to come to work a couple of hours after the OctoberFest, I had no intention of drinking anything alcoholic...
     
    The entertainment consisted of an accordion player, a keyboard player (electronic organ) and drummer. The music was very well performed and they did a nice selection of songs.  It would have been nice to have been able to stay longer.
     
    Dinner: the left over beef and (alas) pork stew from last night, with a 12 oz bottle of "Kroger HomeStyle Beef Gravy" added to maybe salvage the flavour...
     
    This "Beef Gravy" improved the flavour.
     
    I also had a couple of chocolate chip cookies. They were marked down from 75¢ to 50¢ and I suspect they may have been getting a bit long in the tooth.  However, the pull date was 15 Jan 13 so I guess they were just surplus inventory or stuff my coworkers were not buying...

    Dinner: some home made stew made with beef stew meat, pork chops, potatoes, carrots and various seasonings. I realize now this is a bad combination; pork chops are fine as pork chops but I should not put them in my homemade stew. I will have plenty to polish off tomorrow night and the next night...
     
    A little bit of dark chocolate as a post dinner snack.

    Here is a Raisin Jack recipe:

    About This Recipe
    "If you are in the Marines and being deployed, I just want to pass on the best darn recipe you'll ever see. First off tho you have to get in good graces with the ships cook cause you're going to need a few things from him. Actually "everything" except the water and sun. Some dude with a love for hooch made this during WWII and it's been pasted down through quite a few overseas trips. Just hang onto your cover when it's done."

    Ingredients

    • 1 (1 gallon) can white grapes
    • 1 (1 gallon) can fruit cocktail
    • 1 (1 gallon) can raisins
    • 1 gallon fresh water

    Directions

    1. Place all of the ingredints in a Goverment issue 5-gallon water can.
    2. Place on top of the canvas cover on a duece and a half or 5 ton truck.
    3. Lash down tightly to avoid loosing.
    4. Allow 3 days in the hot ocean sunlight and the motion of the sea waves to bring this recipe to a most delightful disaster.
    5. Sip slowly when finished.
    6. This may be shared with swabbies.
    I am going to have to try this. I wonder if the white grapes should be crushed first? After all, the "grape goodness" is contained by the grape skin. When raisins swell up, the "raisin goodness" is contained by the raisin skins. The best you can say is this is fermented fruit cocktail with grapes and re-hydrated raisins floating in it.

    Breakfast: Cheerios and coffee
    Lunch: at the Wyatt Earp street Pizza Hut for a salad, sausage pizza and vanilla pudding.
    I don't like pizza with veggies on it and they did not have any pure meat pizza. So, I gripped to the manager. Several minutes later, he brought me a plate with two slices of sausage pizza. I had thought of bitching about this but this act of excellent service was simply unexpected and wonderful. So, what can I say but "the service was excellent!"  Later, he asked me how the pizza was so I honestly said "great".
    Dinner: a can of Dillions beef stew and some Oreos and iced water. When I get home, I'll have some "Pink" for a belated dessert. ("Pink" is Pepto Bismol.)

    A couple of hours after going to bed, I started coughing up globs of yellow crap and vomited. I then went back to bed and came down with a severe case of shivering. I had two blankets on me, asked my wife to turn the fan off and it took a very long time to warm back up. I also had very painful urination; I remembered dropping my "water pill" the previous morning and that probably screwed me up good. I was sick to around noon on Saturday...

    Exceptionally good food and service: the Tampa Bay Hyatt Restaurant and the restaurant at the Dallas airport.

    Bad food at the Pratt KFC and exceptionally poor service. My wife ordered original recipe and got dried out "extra crispy" (in hind sight, it might actually have been very dried out original recipe!). It was late evening and the KFC seemed to be understaffed and I think the clerk and overwhelmed manager meant well but the food was poor, the service was very bad. Of course, they were concentrating on the drive up customers vice us suckers waiting and waiting and waiting...

    We wish we'd left and gone back to the McDonalds. We cerrtainly do not plan on going back there!

    _______Dinner: We went to the Boot Hill Casino where I hoped for a small fillet. Instead, it was buffet and I had:

    • a small amount of salmon
    • a slice of roast beef
    • a small amount of potato chunks
    • several scrimp
    • roll
    • ice creamme with fudge sauce
    • iced water
    The service was fine but then, how much service is needed at a buffet? Anyway, our waitress kept the water glasses filled and there was not too much of a wait before the bar runner brought Kathie's glass of wine.

    Update on my Boot Hill Casino diatribe:

    Plus: They have opened up extra money losing opportunities slot machines

    Negative: Just a couple...

    • They renamed "Miss Kitty's Saloon" to "Wild Bill's Beer Bar"
    • Sadly, "Bill's Bar" was not open (not that I would have ordered a LandShark on tap as I was designated driver)
    • The apparently one-shot hot dog stand sits empty and unused at the entrance to the Casino. It was probably a promotion or a failed experiment. They should cart the poor damned thing off or use it. As it is, it just makes the place look a bit run down...
    • They had "upgraded" the machines and we had to "get a star" on our user cards to use said cards. We also got free lanyards (whoopee!)
    They had not done much to improve the place since the last time I commented on them; it has not gone down much. We had a new and fine waitress last night and the time before. The waiter who gave bad service in the past is still there. Maybe he needs the job? (I'm not rich either...)

    _____Breakfast:  cheerios and coffee
    _______Lunch:  at Casey's Cowtown where I had roast beef, mashed potatoes and brown gravy, a roll with grape jelly and iced water. Since I had to remind our rather new waitress that the roll came with dinner, this rates as average service. However, she brought the grape jelly I asked for so it wasn't too bad.

    The food was quite good...

                  Snack: a piece of the left over chocolate cake from yesterday at work

    ______Dinner:   I decided to go veggie (sort of)...
    • large salad with tuna fish and Tillamook Extra Sharp Cheddar cheese
    • an attempt at creamme of broccoli soup made from
      • boiled onion
      • boiled broccoli
      • which I blended in some water which I had already blended two chicken bouillon cubes
    • I blended in some more Tillamook Extra Sharp Cheddar Cheese into this
    • and topped off with a splash of milk
    It turned out well save for a bit of an unpleasant taste from the cheddar cheese in the soup. The cheese was great on the salad though...

    Blood sugar before dinner: 120
    Blood sugar about two hours after starting dinner: 126

    So, I guess eating "veggie" can be good for me. Since I am writing this the morning after, I admit that I checked my blood sugar right after getting out of bed. It was quite low for me: 80. I guess "eating veggie" can be a little too good for me!

    Maybe I don't need to go on injected crap quite so soon?

    ________Lunch:  We had an office luncheon and I had:
    • salad
    • the main course, which was noodles with kind of spaghetti sauce
    • two rolls, no butter
    • piece of Cherri's homemade chocolate cake with vanilla ice creamme and Larry's homemade chocolate sauce and
    • a bottle of Diet Pepsi
    _______Dinner:  I made home made spaghetti sauce and should have done a much better job of draining the grease. that is, I should I put the hamburger in a strainer and ran hot water over it!

    Any way, about an hour after going to bed, dinner came back up. This really upset Kathie, who threw a fit, slamming the bedroom door, and yelling at me "that's enough; you can quit vomiting now!" Somehow, I don't think my stomach really gives a shit about being ordered to "quit vomiting now".

    She means well and worries about my health. She is also much more bothered by my "blowing chunks" than I am...

    Lunch: Kathie's boiled brats in mixture of cheap cooking beer, our only decent pepper from the garden, onions (alas, not from the garden) and cold water
     
    Dinner: another boiled meal of:
    • 2 ears corn on the cob
    • boiled boneless skinned chicken
    • piece of bread I buttered to smear said butter on the corn
    • 1½ bottles of LandShark (I lost a ½ bottle when I bumped into the TV tray said beer was sitting on...)
    • small glass of water

    White House beer recipies

    Two White House beer recipes

    White House Honey Porter


    Ingredients

    • 2 (3.3 lb) cans light unhopped malt extract
    • 3/4 lb Munich Malt (cracked)
    • 1 lb crystal 20 malt (cracked)
    • 6 oz black malt (cracked)
    • 3 oz chocolate malt (cracked)
    • 1 lb White House Honey
    • 10 HBUs bittering hops
    • 1/2 oz Hallertaur Aroma hops
    • 1 pkg Nottingham dry yeast
    • 3/4 cup corn sugar for bottling

    Directions

    1. In a 6 qt pot, add grains to 2.25 qts of 168˚ water. Mix well to bring temp down to 155˚. Steep on stovetop at 155˚ for 45 minutes. Meanwhile, bring 2 gallons of water to 165˚ in a 12 qt pot. Place strainer over, then pour and spoon all the grains and liquid in. Rinse with 2 gallons of 165˚ water. Let liquid drain through. Discard the grains and bring the liquid to a boil. Set aside.
    2. Add the 2 cans of malt extract and honey into the pot. Stir well.
    3. Boil for an hour. Add half of the bittering hops at the 15 minute mark, the other half at 30 minute mark, then the aroma hops at the 60 minute mark.
    4. Set aside and let stand for 15 minutes.
    5. Place 2 gallons of chilled water into the primary fermenter and add the hot wort into it. Top with more water to total 5 gallons if necessary. Place into an ice bath to cool down to 70-80˚.
    6. Activate dry yeast in 1 cup of sterilized water at 75-90˚ for fifteen minutes. Pitch yeast into the fermenter. Fill airlock halfway with water. Ferment at room temp (64-68˚) for 3-4 days.
    7. Siphon over to a secondary glass fermenter for another 4-7 days.
    8. To bottle, make a priming syrup on the stove with 1 cup sterile water and 3/4 cup priming sugar, bring to a boil for five minutes. Pour the mixture into an empty bottling bucket. Siphon the beer from the fermenter over it. Distribute priming sugar evenly. Siphon into bottles and cap. Let sit for 1-2 weeks at 75˚.



    White House Honey Ale


    Ingredients

    • 2 (3.3 lb) cans light malt extract
    • 1 lb light dried malt extract
    • 12 oz crushed amber crystal malt
    • 8 oz Biscuit Malt
    • 1 lb White House Honey
    • 1 1/2 oz Kent Goldings Hop Pellets
    • 1 1/2 oz Fuggles Hop pellets
    • 2 tsp gypsum
    • 1 pkg Windsor dry ale yeast
    • 3/4 cup corn sugar for priming

    Directions

    1. In an 12 qt pot, steep the grains in a hop bag in 1 1/2 gallons of sterile water at 155 degrees for half an hour. Remove the grains.
    2. Add the 2 cans of the malt extract and the dried extract and bring to a boil.
    3. For the first flavoring, add the 1 1/2 oz Kent Goldings and 2 tsp of gypsum. Boil for 45 minutes.
    4. For the second flavoring, add the 1/2 oz Fuggles hop pellets at the last minute of the boil.
    5. Add the honey and boil for 5 more minutes.
    6. Add 2 gallons chilled sterile water into the primary fermenter and add the hot wort into it. Top with more water to total 5 gallons. There is no need to strain.
    7. Pitch yeast when wort temperature is between 70-80˚. Fill airlock halfway with water.
    8. Ferment at 68-72˚ for about seven days.
    9. Rack to a secondary fermenter after five days and ferment for 14 more days.
    10. To bottle, dissolve the corn sugar into 2 pints of boiling water for 15 minutes. Pour the mixture into an empty bottling bucket. Siphon the beer from the fermenter over it. Distribute priming sugar evenly. Siphon into bottles and cap. Let sit for 2 to 3 weeks at 75˚.

    • two ears of corn
    • chicken, boiled
    • Ramon noodles with the chopped up chicken
    • water
    • a bottle of LandShark
    Pre-Bed Snack:

    Anne Romney’s Welsh Skillet Cakes

    ___Anne Romney’s Welsh Skillet Cakes
    Ingredients:
    1 egg
    1 1/4 cups currants
    1/2 cup milk
    3 1/2 cups flour
    1 cup granulated sugar
    2 tsp nutmeg
    1/2 teaspoon baking powder
    1/2 teaspoon baking soda
    1/4 teaspoon salt
    1 cup butter
    Directions:
    Beat the egg with the milk. Add currants. Sift all other dry ingredients together. Work butter into flour and mix until mealy. Pour milk and currants over flour and butter mixture all at once and mix well. Wrap in wax paper and chill for at least one hour.
    Roll it a little less than half an inch thick — actually about 3/8 of an inch. You may think this is too precise, but it’s very important not to roll too thin.
    Cut with cookie cutter. Cook on a pancake griddle greased with oil (325 degrees Fahrenheit) on both sides. Flip the cookies when you see they are shiny. Cook it for less time on the second side. Roll in granulated sugar and let cool.
    Resist the urge to eat them right away out of the oven — these are the only cookies that taste better cooled.
